I should mention something up front. I read somewhere that the best way to make stew is to bake it in a dutch oven, not boil it on the stove top.

Garden Vegetable stew

Mariah Ford sent the above link in 9/2022. Here are the ingredients:
1/4 cup butter
3 medium onions chopped (1.5 cups)
4 medium carrots, thinly sliced (2 cups)
4 cans (14 oz each) vegetable broth
1.33 cups uncooked rice
2 cups whole kernel corn (frozen)
2 tb chopped fresh basil (or 2 tps dry)
1/2 tsp dry thyme
1/2 tsp pepper
8 new potatoes cut into fourths
2 bell peppers cut into strips
2 medium zuccini, thinly sliced.
Melt the butter in a dutch oven (yeah!) and use it to cook onions and carrots.
Stir in broth and rice, boil, then reduce heat and simmer 20 minutes.
Stir in everthing else. Cover and simmer 10-15 minutes or until tender.
